Recipe Exchange

So a friend sent me a great recipe for soup yesterday (http://t.co/UUd9ag0E).  I wanted to reciprocate, but I don’t have a link to the recipe anywhere online.  So I thought I would post it here…

Ingredients:

2 tbsp unsalted butter
2 medium onions – finely chopped
2 cloves garlic – finely chopped
3 medium sweet potatoes – peeled and sliced
1 jalapeno pepper – seeded and chopped
1 tsp chipotle – optional
4-5 cups chicken or vegetable stock – I always do 5 b/c it is very thick otherwise.
salt
1/4 cup lime juice
sour cream
Directions:
1.  Heat butter in a large pot.  Add onions and soften over medium heat.  Add garlic, sweet potatoes, jalapeno pepper, and chipotle – stir to coat with the buttery onions.
2.  Add chicken stock and a dash of salt.  Bring to a boil, reduce heat and simmer partially covered until veggies are tender – about 20 minutes.  Puree the mixture.
3.  Reheat gently, add lime juice and season to taste.  Soup will thicken as it rests – so you may need to adjust amount of stock.
4.  Serve hot with a swirl of sour cream in each bowl.

In Summary…

So I’m back!  I landed in Toronto on July 9th around 4:30pm and made it into my bed by about 10:30pm.  I didn’t sleep particularly well, but I’m better today than I was on Sunday and I’m sure by the end of this week everything will be completely normal again.  I unpacked everything, though I have yet to do laundry and now I can work on getting my home tidied up properly, which it hasn’t been since early June!

I did what (I think) was my last official duty for the COC related to my participation in the International Olympic Academy this morning – a TV interview live on Sun News that was about four minutes long.  Since this marks the end, I thought I should sum it all up into one spot for you to find it.  I hope you enjoyed following me along on my trip!

I have already said it once or twice, but thank you again to the International Olympic Committee, International Olympic Academy and the Canadian Olympic Committee for this wonderful experience.  Another thank you to all of the wonderful people I met at the Academy that I hope to stay in touch with for many years to come and lastly thank you to my family who helped get me to Olympia – lending me suitcases and clothes and driving me to and from the airport!  The little things mean the most.  :)
